Mint Jelly

Directions:

  1. Prepare the Mint Infusion:
  • In a medium saucepan, combine the mint leaves and water.
  • Bring to a boil over medium heat, then remove from heat and let steep for 10 minutes.
  1. Strain the Infusion:
  • Strain the mixture through a fine mesh sieve, pressing the mint leaves to extract as much liquid as possible.
  • Discard the mint leaves.
  1. Prepare the Jelly Mixture:
  • Return the mint infusion to the saucepan.
  • Add the lemon juice and sugar, stirring to dissolve the sugar.
  • Bring the mixture to a full rolling boil over high heat, stirring constantly.
  1. Add Pectin and Food Coloring:
  • Stir in the liquid pectin and return to a full boil.
  • Boil for 1 minute, stirring constantly.
  • Remove from heat and skim off any foam.
  • Add the green food coloring, if desired.
  1. Jar the Jelly:
  • Ladle the hot jelly into sterilized jars, leaving 1/4-inch headspace.
  • Wipe the rims clean and apply the lids and bands.
  1. Process the Jars:
  • Process the jars in a boiling water bath for 10 minutes.
  • Remove the jars from the water and let cool completely.
  1. Check Seals and Store:
  • Check the seals on the jars. The lids should not flex up and down when pressed.
  • Store the jars in a cool, dark place.
