Directions:
- Prepare the Mint Infusion:
- In a medium saucepan, combine the mint leaves and water.
- Bring to a boil over medium heat, then remove from heat and let steep for 10 minutes.
- Strain the Infusion:
- Strain the mixture through a fine mesh sieve, pressing the mint leaves to extract as much liquid as possible.
- Discard the mint leaves.
- Prepare the Jelly Mixture:
- Return the mint infusion to the saucepan.
- Add the lemon juice and sugar, stirring to dissolve the sugar.
- Bring the mixture to a full rolling boil over high heat, stirring constantly.
- Add Pectin and Food Coloring:
- Stir in the liquid pectin and return to a full boil.
- Boil for 1 minute, stirring constantly.
- Remove from heat and skim off any foam.
- Add the green food coloring, if desired.
- Jar the Jelly:
- Ladle the hot jelly into sterilized jars, leaving 1/4-inch headspace.
- Wipe the rims clean and apply the lids and bands.
- Process the Jars:
- Process the jars in a boiling water bath for 10 minutes.
- Remove the jars from the water and let cool completely.
- Check Seals and Store:
- Check the seals on the jars. The lids should not flex up and down when pressed.
- Store the jars in a cool, dark place.
