Peony Jelly: A Delightfully Floral Spread

Directions:

  1. Prepare the Peony Petals:
  • Rinse the peony petals to remove any dirt or insects.
  1. Make Peony Tea:
  • Place the petals in a large heatproof bowl and pour boiling water over them.
  • Allow the petals to steep for 4-6 hours or overnight to make peony tea.
  1. Strain the Tea:
  • Strain the peony tea through a fine mesh strainer or cheesecloth, discarding the petals.
  • Measure 3 1/2 cups of the tea.
  1. Prepare the Jelly Mixture:
  • Pour the peony tea into a large pot and add the lemon juice.
  • Stir in the powdered pectin and bring the mixture to a boil over high heat, stirring constantly.
  1. Add Sugar and Boil:
  • Add the sugar and return to a full rolling boil.
  • Boil for 1-2 minutes, stirring constantly, until the jelly thickens.
  1. Process the Jelly:
  • Remove the pot from heat and skim off any foam.
  • Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace.
  • Wipe the rims, apply lids, and process in a boiling water bath for 10 minutes.
  1. Cool and Store:
  • Allow the jars to cool undisturbed for 12-24 hours.
  • Check seals before storing.
