Directions:
- Prepare the Peony Petals:
- Rinse the peony petals to remove any dirt or insects.
- Make Peony Tea:
- Place the petals in a large heatproof bowl and pour boiling water over them.
- Allow the petals to steep for 4-6 hours or overnight to make peony tea.
- Strain the Tea:
- Strain the peony tea through a fine mesh strainer or cheesecloth, discarding the petals.
- Measure 3 1/2 cups of the tea.
- Prepare the Jelly Mixture:
- Pour the peony tea into a large pot and add the lemon juice.
- Stir in the powdered pectin and bring the mixture to a boil over high heat, stirring constantly.
- Add Sugar and Boil:
- Add the sugar and return to a full rolling boil.
- Boil for 1-2 minutes, stirring constantly, until the jelly thickens.
- Process the Jelly:
- Remove the pot from heat and skim off any foam.
- Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace.
- Wipe the rims, apply lids, and process in a boiling water bath for 10 minutes.
- Cool and Store:
- Allow the jars to cool undisturbed for 12-24 hours.
- Check seals before storing.
